I’ve started taking my lunch to work every day in an effort to save time, calories and money (OMG DID I JUST WRITE THAT? SAVE TIME, CALORIES AND MONEY?? someone check my pulse…).
Annnnyway, while I do love me some spinach salads, I’m also exploring other ideas for brown baggin’ it. This is a recipe I used to make all the time, but somehow along the way I forgot about it! I couldn’t find the exact recipe I used to use, so I just kind of winged it (wung it? wang it?)…and I guess I did a good job because it tastes pretty dang good!
This makes a good lunch because it’s equally delicious cold or hot.
Sesame Peanut Noodles
16 oz box of angel hair pasta (i like to use whole wheat or the fancy high fiber/protein kind)
1 bag frozen shelled edamame
2/3 cup peanut butter (crunchy is best)
1/2 cup soy sauce
2 tbsp sesame oil
1 tbsp salad oil
2 tbsp rice vinegar
2 tbsp apple cider vinegar
1 tsp sriracha (more if you like stuff spicy! but definitely taste before adding more)Cook the pasta like you normally would, and throw in the frozen edamame during the last 2 minutes or so of cooking.
In a separate bowl, combine the remaining ingredients. I usually microwave it for about 2 minutes on 50% power to melt the peanut butter and make it easier to mix up. Be sure to stir it up well, because it is considerably harder to mix once you pour it over the pasta!
Once the pasta and edamame have finished cooking, drain them well and then pour the sauce over it. Give it a good toss to make sure all the noodles get coated (nobody wants to find a mystery pocket with no sauce! The worst!).
And that’s it!! Can you believe it?!?? I KNOW. You can garnish with green onion, toasted sesame seeds, or a squeeze of lime juice…but I am not organized so I didn’t any of those things on hand.
Like I said, it’s good hot, cold, or room temperature. This recipe makes a TON, so we all ate it for dinner tonight, and I have lunch for tomorrow (and the next day). Yay!
